The 21 Burger
2 lbs of chuck or tri tip
1 lb of applewood smoked bacon (do not use the thick cut bacon, it has too much fat and needs the flavor from the smoked bacon)
blue cheese crumble (optional)
hamburger buns and favorite toppings
- Use a meat grinder or food processor to grind the chuck or tri tip with the bacon. Add a little of each to mix well. Grind until it is the consistence of hamburger, do not over grind.
- Form the 2/1 mixture into either 1/3 or 1/4 lb patties.
- Place patties in the freezer until they are firm but not frozen. This will hold them together while cooking. (approx. 1 hour)
- Sprinkle with your favorite D-Dog BBQ seasoning.
- Barbecue until the desired doneness.
- Garnish with your favorite toppings.
